Welcome to my baking blog

Well, here is my New Year's Resolution! I have always been told I should start a baking blog, and truly, it’s always something I've wanted to do myself. My resolution for 2012 is to keep a baking blog by posting some of my favorite and personal recipes. My plans for this blog are simple - easy baking. I find that a lot of people are intimidated by baking, so I am here to show you, step-by-step, that baking is easy and very fun. We have all burned cookies, forgotten the sugar, and even thrown out an entire batch of something that looked beautiful online. I hope you enjoy!

Chocolate Peanut Butter Brownie Bites

I cannot begin to tell you how excited I am to be doing this baking blog! I have had an outpouring of support from everyone, so thank you all very much.
I woke up the other night around 3:30 in the morning - all I could think about were the numerous recipes running through my mind, and how I couldn't wait to share them with you guys.   I'm going to lay it on thick in the beginning, but promise that I'll eventually slow down to one or two posts a week.

Today...I have a treat for you!  I have a big heart for chocolate and peanut butter.  I blame this love on 2 things:
1 - My mother (later in the blog I have her famous peanut butter chocolate cookies)
2 - These -  

and can you believe they make them for every season now!?

I hope you enjoy these as much as I did!

INGREDIENTS:
1 box of your favorite brownie mix (including the ingredients on box directions, most likely eggs and   oil)
1/2 cup of  peanut butter chips
1/2 cup of semi-sweet chocolate chips
3/4 cup of peanut butter



Pre-heat oven at 350 degrees. Prepare the boxed brownies as directed.  Spoon batter into a mini muffin pan and bake for 13-15 minutes or until a toothpick comes out clean.











Allow brownies to cool for a few minutes, and then begin pressing the middles down with the back of a spoon, or your finger. This will allow enough room for the peanut butter and chips that we're going to add in on the next step. (If you're wondering why one is missing...I didn't eat it.....)


With the brownies still a little warm, melt your peanut butter in the microwave for about 30 seconds, stir well as soon as it comes out (and enjoy the smell!)
Spoon in the warmed peanut butter and sprinkle on a few chocolate and peanut butter chips.


Now your dessert is complete!  I took a little extra step on these and melted down some extra chocolate chips and drizzled the brownies, although I forgot to take a picture.  Adding extra chocolate is never a bad thing.
