To further explain my commitment - the other part of my New Year's resolution is to no longer buy gossip magazines. Anyone who is into reading these, knows just how tough it can be to simply check out at the grocery store or take a flight to the other side of the country. On the bright side, I have saved a good chunk of money and also gotten time with some great books.
Today I have yet another breakfast treat! This is a small twist on banana break that found on the site www.littlebittybakes.com. I happen to love banana bread, but am always disappointed to find nuts. This is a great alternative to nuts to a sweet crunch to the bread. Enjoy!
Cinnamon Toast Crunch Banana Bread
INGREDIENTS:
2 ripe banana, mashed
4 Tablespoons of Canola Oil
1 Cup of plain or vanilla Greek yogurt
2 Eggs
1 Tablespoon of vanilla extract
1/2 Cup of sugar
3/4 teaspoon of salt
1/2 teaspoon of baking powder
1/4 teaspoon of baking soda
1 1/2 Cups of flour
2 Cups of Cinnamon Toast Crunch cereal
DIRECTIONS:
Heat the oven to 350 degrees F. Spray two 8-inch loaf pans with nonstick cooking spray.
In a large mixing bowl, stir the bananas, oil, yogurt, eggs, and vanilla until mixed well. In a separate small mixing bowl, stir the sugar, salt, baking powder, baking soda, and flour. Add the dry ingredients to the wet ingredients, stirring until just mixed. Stir in 1 cup of the cereal.
Spread the batter into the prepared pans. Sprinkle the remaining cereal over the top. Bake 35 to 40 minutes or until an inserted knife comes out clean. Allow to cool at least 10 minutes before slicing.
Preheat oven to 350 degrees. I like to make thin 'bread bars' so I use 2 8-inch loaf pans. If you want to make a thick true loaf of bread, just spray one and cook long enough for a knife to come out clean.
Mix together bananas, oil, yogurt, eggs and vanilla
In a separate bowl, mix sugar, salt, baking power, baking soda and flour
Spread batter into loaf pan(s) and top with crushed Cinnamon Toast Crunch
Bake for about 40 minutes or until a knife comes out clean.
Enjoy - Cool and enjoy warm :)
